The name Callebaut, likely The World's Most Famous Name in Chocolate, definitely influenced Calgary's Bernard Callebaut to persue his dreams. As a boy growing up in Belgium, young Bernard was mezmerized by both his grandfather's and his father's inherent abilities to transform simple, pure natural ingredients into truly magical chocolate creations.
Now Bernard Callebaut has a new brand to celebrate his life in chocolate. Papa Chocolat is the brand. Bernard is Papa's exclusive master chocolatier. Papa Chocolat (shock-oh-la - the Belgium pronunciation) is the name his boys affectionately call their father. And so it has become Bernard's proud signature for his boutique chocolate business. Calgary's Papa Chocolat has sprung up from the never ending wellspring of passion of this true master chocolatier. Recognised internationally for his award winning, exquisite chocolate, including being honored as the first international chocolatier to be awarded France's most prestigious gastronomic National honor, Bernard, since starting up Papa Chocolat, has also won Gold and Silver Awards at The International Chocolate Salon Awards in Los Angeles and in London England respectively. Papa Chocolat also received the Gold Award for Best Chocolate Boutique at Calgary's Top Choice Awards in 2013.

Growing a family business has been a lifelong passion, filled with tremendous rewards and difficult challenges for Papa Chocolat's chocolatier and owner, Bernard Callebaut. A true chocolate artisan, with an unmatched dedication to natural and organic ingredients, he focuses his skilled palette on each locally and globally-sourced ingredient. Building flavour upon flavour with ultimate attention to taste and texture while maintaining balance. Creating the perfect balance is key. The right mixture of cacao and cacao butter infused with both familiar and exotic flavours such as cinnamon, vanilla, earl grey, cayenne, cassis, ginger, lavender and mango, Bernard seeks perfection in each and every exquisite bite.
Inspiration for Papa Chocolat's fine selection of chocolate creations comes from 5 generations of the Callebaut family. Belgium-born Bernard Callebaut grew up in a family of chocolate makers. His young palette was honed by devine family recipes handed down from his great grandfather, to his grandfather, then to his father and now he, as a father too, is teaching his two young boys. They say in order to truly succeed in life, one has to teach what they've learned and pass on the knowledge that they have benefited from. Chocolate classes are one of Papa Chocolat's favourite ways to give back to our loyal chocolate fans.
